Ingredients

  • 2 lbs lean ground beef
  • 2 onions, chopped
  • 2 bell peppers, chopped
  • 2 cans whole kernel corn, drained
  • 2 cans stewed tomatoes
  • 1 can pinto beans, drained
  • 1 can Ro-tel
  • 6 beef bouillon cubes dissolved in 2 cups hot water
  • 2 pkgs taco seasoning
  • 2 to 3 c water
  • Grated cheese, chopped avocado, black olives for topping

Preparation

Step 1

Brown gound beef, pur off fat. Add chopped onions and bell pepper. Saute until vegetables are tender. Add corn, stewed tomatoes, beans and Ro-tel.

Add bouillon cubes dissolved in ot water, taco seasoning and water. Simmer for about 30 minutes.

Serve with tortilla chips, sour cream and toppings, if desired.
