Pimiento Cheese Bites

Ingredients

  • 2 cups grated cheddar cheese
  • 1/2 cup chopped pimiento-stuffed green olives
  • 1/4 cup light mayonnaise
  • 1/4 cup chopped scallion
  • 1/2 teaspoon red-pepper sauce
  • Salt and black pepper to taste
  • 2 baguettes (12 ounces each), sliced 1/2 inch thick
  • 6 Tablespoons unsalted butter, melted

Preparation

Step 1

In a medium bowl combine cheese, olives, mayonnaise, scallion and red-pepper sauce. Season with salt and pepper.

Spread cheese mixture on half the bread slices. Top with remaining slices.

Heat large griddle over medium-high. Brush with 1 Tablespoon butter.

Toast sandwiches, in batches, turning once, for 2-3 minutes or until cheese has melted. Brush griddle with butter between batches.
