Ingredients

• 30 oz pineapple tidbits, drained OR fresh coarsely
• grated pineapple
• 4 c cold cooked rice
• 2 c mini marshmallows
• 1/2 c walnuts or macadamia nuts, coarsely chopped
• 1/2 c sugar
• 7 oz jar maraschino cherries, coarsely chopped
• 2 t lemon juice
• 1/2 t cinn
• 1 c heavy cream, whipped

Preparation

Step 1

Combine all. Turn into 1 1 1/2 qt spring-form mold & chill overnight.
