Seafood, Mushroom and Noodle Casserole

Ingredients

  • 1/2 lb. cooked seafood
  • 1/4 lb. mushrooms
  • 2 hard cooked eggs
  • 3 Tbs. butter
  • 1 1/2 Tbs. chopped shallots
  • salt and pepper
  • 1 Tbs. flour
  • 1 1/2 cups milk
  • 1 raw egg yolk
  • Tabasco sauce
  • 2 tsp. sherry
  • 1/2 lb. fine buttered noodles
  • 1/3 cup grated gruyere, Swiss or parmesan cheese

Preparation

Step 1

Melt 2 Tbs. butter and add shallots, cook briefly and add sliced mushrooms, salt and pepper. Cook about 5 minutes. Sprinkle with flour and stir with a wire whisk until mushroom pieces are coated. Add milk and cook until the sauce thickens, stirring constantly. Cook five additional minutes. Remove sauce from heat and add egg yolk stirring rapidly. Add Tabasco and sherry. Cook and drain noodles, add 1 Tbs. butter, salt and pepper. Spread noodles, then seafood, then sliced cooked egg, then sauce into lightly buttered pan. Sprinkle with cheese and place in preheated 450 oven.
