Ingredients
- 1 cup chopped onion
- 1 cup coarsely chopped red bell pepper
- 2 T finely chopped jalapeno pepper
- 2 T snipped cilantro
- 1 tsp vegetable oil
- 2 garlic cloves, pressed
- 2 cans (15 oz) black beans, drained and rinsed
- 1 can (16 oz) fat-free refried beans
- 1 can (14 oz) fat-free vegetable broth
- 1 T lime juice
- 1 tsp ground cumin
- Queso fresco (optional)
Preparation
Step 1
1. Saute the chopped onion, bell pepper, jalapeno and garlic for 3 minutes in the vegetable oil.
2. Add the black beans, refried beans, broth, lime juice and cumin. Bring to a boil. Reduce heat; simmer, uncovered, 10 minutes.
3. Remove from heat; stir in cilantro. Serve and sprinkle with cheese, if desired.
