  • 1 lb turkey breast tenderloins
  • 1 T olive oil
  • 1/2 t salt
  • 1/4 t black pepper
  • 6 cups chopped raddichio
  • 6 cups chopped romaine hearts
  • 1 c dried cranberries
  • 3/4 c bottled balsamic dressing
  • 3 T maple syrup
  • 1 c slivered almonds, toasted

Preparation

Step 1

preheat oven to 350. brush turkey with olive oil and sprinkle with salt and pepper. place turkey on baking pan and cook covered for 30 mins. uncover and bake until internal temp reaches 170 (about 20 mins). cool and shred or cut up. In large bowl, combine turkey, lettuces and cranberries. Whisk together balsamic dressing and maple syrup, pour over salad and toss gently. sprinkle with almonds and serve.
