Ingredients
- 1 cup sugar
- 8 ounces nonfat cottage cheese
- 4 tbsp nonfat margarine (Promise or Fleischmanns)
- 8 ounces nonfat cream cheese
- 3 Egg Beaters 99% egg substitute (or 4 egg whites)
- 1 tbsp lemon juice
- 1/2 tbsp vanilla
- 2 tbsp cornstarch
- 2 tbsp flour
- 1/2 pint nonfat sour cream
Preparation
Step 1
Cream sugar and cottage cheese together with an electric mixer, blender or food processor to try to get it as smooth as possible. When smooth, add the rest of the ingredients. Beat 15 minutes with electric beater on high. (I usually get too impatient and "cheat" on the 15 minutes). Put into a round pie plate or springform pan - you might have a little left over (I then use a small Corning bowl and make a tiny "test" cake for me to eat before the guests!).
Bake at 300 F for 60 to 70 minutes until it is solid and slightly browned. Shut off oven and let sit for 3 hours. I usually garnish with fresh berries, or a combination of chocolate and berries.
