Proscuitto, Onion, and Pepper Bonbons

Ingredients

  • 1 tbs. oil
  • 15 grams butter
  • 1 small onion, sliced
  • 1 clove garlic, crushed
  • ½ medium red pepper
  • 3 sheets filo pastry
  • 60 grams butter, melted
  • 2 tbs. walnuts, toasted and chopped
  • 5 slices proscuitto, chopped
  • 1 tbs. chopped fresh basil

Step 1

Heat the oil and butter, add onions and garlic, cook, stirring until the onions is very soft and lightly browned; drain on paper towels; cool.

Cut the pepper in half, remove seeds and membranes. Grill the pepper, skin side up, until skin blisters and blackens. Peel away the skin, slice pepper into 16 long strips.

Layer pastry sheets together, brushing each with butter. Cut pastry into quarters, cut each quarter into quarters again. Top each quarter evenly with the onions mixture, pepper, nuts, proscuitto and basil. Roll up from narrow sides, press down end with a form to form bonbon shapes. Place on a greased tray and bake for 10 minutes or until lightly browned and crisp.

Bonbons can be made a day ahead and can be stored covered in the refrigerator.
