Marinated Caesar-Style Potato Salad

Ingredients

  • DRESSING
  • 1/4 cup oil
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon lemon juice
  • 1 tablespoon Worcestershire sauce
  • teaspoon salt
  • teaspoon pepper
  • SALAD
  • 4 cups cubed, cooked potatoes
  • 6 slices bacon, crisply cooked, crumbled
  • 1/4 cup chopped fresh parsley or 1 1/2 teaspoons parsley flakes
  • 2 tablespoons chopped green onions, including tops
  • 2 eggs, hard-cooked, cut into wedges

Preparation

Step 1

In small jar with tight-fitting lid, combine all dressing ingredients; shake well. In large bowl, combine all salad ingredients except eggs. Pour dressing over potato mixture, toss lightly. Refrigerate to blend flavors. Garnish with egg wedges.
