Ingredients
- 1 lb (give or take) smoked pork, rib meat, tri tip etc.
- 2 tbs extra virgin olive oil
- 2 tsp cumin
- 1 large onion (chopped)
- 1 scallion (minced)
- 5 med cloves garlic (minced)
- 2 cans diced tomato and peppers
- 1 can white kidney beans
- 1 can light red kidney beans
- 2 cans black beans
- 32 oz. chicken sweat (canned chicken broth)
- 1/2 tsp black pepper
- 1 can cream corn
- 1/8 cup lime juice
- 1 can whole kernel corn
- 1/2 cup diced sweet vidalia onions
Preparation
Step 1
1.Dice onion and scallions and saute' in olive oil until tender add garlic and saute' until aromatic and tender.
2.Add tomatoes, cumin, pepper, red and white kidney beans, chicken sweat and cream corn and pork; simmer 15 minutes.
3.Blend both cans of black bean and lime juice in food process or blender and add after simmering for an additional 20 minutes until meat is tender and flavors blend (add salt to taste).
4.Serve with sour cream, sweet vidalia and whole kernel corn garnish.
