Ingredients

  • 3 Eggs

  • 1 cup Vegetable Oil

  • 2 1/2 cups Sugar

  • 2-3 cups Zucchini, peeled and grated

  • 3 tsp. Vanilla

  • 3 cups All-Purpose Flour

  • 1 tsp. Baking Soda

  • 1 tsp. Salt

  • 1 tsp. Baking Powder

  • 3 tsp. Cinnamon

  • 1 1/2 tsp. Nutmeg

  • Dash of Ginger

  • Dash of Ground Cloves

  • 1 cup Chopped Nuts (optional)

  • 1 1/2 cups Raisins (optional)

Directions

Beat eggs; add oil, sugar and vanilla. Mix well and add zucchini. Combine dry ingredients and mix with zucchini mixture, blending thoroughly. Add nuts and raisins, if using, and blend. Pour into greased and floured loaf pans and bake at 350 degrees for about 1 hour. Makes 2 loaves.
