Ingredients
- 1 whole chicken
- 1/2 tsp. sea salt
- 1/2 tsp. garlic salt
- 1/4 tsp. black pepper
- 1 tsp. dark brown sugar
- 1/4 tsp. cayenne pepper
- 1/2 tsp. paprika
- 1/4 tsp. onion powder
- 1 tsp. barbecue seasoning (check ingredients for hickory or mesquite)
Preparation
Step 1
1 Preheat oven to 300 degrees.
2 In a small ball mix salt, garlic salt, pepper, brown sugar, cayenne, paprika, onion powder,and barbecue seasoning.
3 Rub the spice mix all over the skin of chicken. If time permits place into fridge uncovered overnight.
4 Place chicken on a rack in a baking dish. Roast for 2 hours. During the last hour of cooking time baste every 1/2 hour with pan juices.
