Green Chili Cheese Dip

Ingredients

  • ■1/2 C. finely chopped onion
  • ■1 Tbs. butter
  • ■2 med. tomatoes, peeled, seeded, cored, and chopped
  • ■one 4-oz. can whole green chilies, seeded, rinsed, and chopped
  • ■1/4 tsp. salt
  • ■1 1/2 C. shredded cheddar cheese
  • ■milk
  • ■tortilla chips

Preparation

Step 1

In a medium skillet, cook onion in butter until tender. Stir in tomatoes, chilies, and salt. Simmer, uncovered, for 10 minutes. Add cheese, a little at a time, stirring until cheese is melted. Stir in a little milk if mixture becomes too thick. Serve immediately with tortilla chips for dippers.
