Ingredients

  • 1 small onion
  • 4 Tbsp olive oil
  • 12 small potatoes (10 oz)
  • 1/2 tsp salt
  • 2 cloves minced garlic
  • 5 c spinach
  • 8 large eggs
  • 3 Tbsp Parmesan cheese

Preparation

Step 1

Saute onion in 2 Tbsp olive oil. Add thinly sliced potatoes and 1/4 tsp salt, about 12 minutes. Add garlic until potatoes are done. Toss in spinach until wilted. Cool in bowl. stir in eggs, 1/4 tsp salt and papper. Heat oil in pan. Cook egg mixture and sprinkle with cheese until set. Broil briefly until brown.
