Spicy Dark Fruitcake

A nice fruitcake at Christmas time. Make ahead and store for later use.
Ingredients
- 3 1/2 cups of mixed diced fruit & peel make for fruitcakes.
- 1 1/4 cups of dark seedless raisins
- 1 1/4 cups of light seedless raisins
- 1 cup of chopped walnuts
- 1 cup of chopped pecans
- 3 cups of flour
- 1 teaspoon of baking powder
- 1 teaspoon of salt
- 1 teaspoon of cinnamon
- 1 teaspoon of allspice
- 1/2 teaspoon of nutmeg
- 1/2 teaspoon of cloves
- 1 cup of shortening
- 2 cups of brown sugar
- 4 large eggs
- 3/4 cup of grape juice

Step 1
Grease 2 loaf pan. Set oven at 175 degrees.
Mix fruit and peel, raisins, nuts together, set aside.
Mix flour, baking powder, salt & spices in a bowl, sprinkle 1/4 cup of mixture over fruit, mixing well.
In another bowl mix shortening, sugar. Add eggs 1 at a time, beating well after each egg. Mix dry ingredients to creamed mixture alternating with grape juice. Beating well after each addition. Pour batter over fruit and mix well.
Put into the 2 greased loaf pans. Fill up to 3/4 full. Bake for 3 hours.
In a pan under the loaf pans have 2 cups of water. It will have greater volume, moist texture, and a shiny glaze. Cool pans and remove fruit cakes.
