Ingredients

  • 3 1/2 cups of mixed diced fruit & peel make for fruitcakes.

  • 1 1/4 cups of dark seedless raisins

  • 1 1/4 cups of light seedless raisins

  • 1 cup of chopped walnuts

  • 1 cup of chopped pecans

  • 3 cups of flour

  • 1 teaspoon of baking powder

  • 1 teaspoon of salt

  • 1 teaspoon of cinnamon

  • 1 teaspoon of allspice

  • 1/2 teaspoon of nutmeg

  • 1/2 teaspoon of cloves

  • 1 cup of shortening

  • 2 cups of brown sugar

  • 4 large eggs

  • 3/4 cup of grape juice

Directions

Grease 2 loaf pan. Set oven at 175 degrees. Mix fruit and peel, raisins, nuts together, set aside. Mix flour, baking powder, salt & spices in a bowl, sprinkle 1/4 cup of mixture over fruit, mixing well. In another bowl mix shortening, sugar. Add eggs 1 at a time, beating well after each egg. Mix dry ingredients to creamed mixture alternating with grape juice. Beating well after each addition. Pour batter over fruit and mix well. Put into the 2 greased loaf pans. Fill up to 3/4 full. Bake for 3 hours. In a pan under the loaf pans have 2 cups of water. It will have greater volume, moist texture, and a shiny glaze. Cool pans and remove fruit cakes.
