Ingredients

  • Filling:
  • 3/4 cup sugar4 tble cornstarch
  • 1/2 tsp salt
  • 3 cups milk
  • 3 egg yols, slightly beaten
  • 1 tble butter
  • 2 tsp vanilla
  • Topping
  • 1 cup heavy cream
  • 2 tble confectioners sugar
  • 1/2 tsp vailla

Preparation

Step 1

1. bake and cool pie shell

2. making filling: medium saucepan combine sugar, cornstarch and salt; mix

3. graduallly stir in milk, mixing until smooth

4. over medium heat, bring to boil, stirring occasionally; boil 1 minute stirring

5. remove from heat and stir 1/2 hot mixture into egg yolks; pour back into saucepan and mix well

6. return to boiling stirring occasionally; boil 1 min

7. remove from heat and gently stir in butter and 2 tsp vanilla

8. cool and then pour 1/2 the filling into the pie shell

9. slice 2 large ripe bananas on the diagonal and arrange over filling

10. add rest of filling over bananas

11. refrigerate at least 3 hours

12. make topping about 1 hour before serving; with rotary beater make whipped cream and spread over filling

13. refrigerate 1 hour longer
