Roast Leg of Lamb with New Potatoes

Ingredients

  • 4 lbs. boneless leg of lamb
  • 2 tbs. olive oil
  • Salt and pepper
  • 1 ½ lbs. new potatoes, boiled for 4 minutes
  • 6 shallots, diced
  • 1 cup dry white wine
  • ¼ cup parsley, finely chopped

Preparation

Step 1

Preheat oven to 350 degrees. Place lamb on a baking sheet and rub with oil, season an place in the oven. When lamb has cooked for 30 minutes add the potatoes, shallots and wine, roast 40 minutes until the lamb reaches the desired doneness. Arrange the meat on a platter with potatoes. Top with cooking juices, herbs, and serve.
