Black Bean-and-Orzo Salad

Ingredients

  • 3 1/2 C. cooked orzo (rice shaped pasta)
  • 1 C. chopped red bell pepper
  • 1/2 C. chopped purple onion
  • 1/2 C. chopped fresh parsley
  • 1/4 C. chopped fresh basil
  • 1 (15 1/2 oz) black beans, rinsed and drained
  • 1/4 C. red wine vinegar
  • 3 T. water
  • 2 T. balsamic vinegar
  • 1 T. olive oil
  • 1 1/2 t. sugar
  • 1 t. pepper
  • 3/4 t. salt
  • 2 cloves garlic, minced

Preparation

Step 1

Combine first 6 ingredients in a large bowl; toss well, and set aside.

Combine red wine vinegar and next 7 ingredients in a bowl, and stir well. Pour over orzo mixture, and toss well. Cover and chill
