Ice Box Pudding

Ingredients

  • 1 pkg Knoxx gelatin
  • 1 cup sugar
  • 2 eggs
  • 1 cup milk
  • 1 tsp vanilla
  • 1 small container cool whip
  • graham cracker crust

Preparation

Step 1

1. Make graham cracker crust, cool.

2. Place Knoxx gelatin in 1/4 cup water and dissolve, set aside.

3. Cook 1 cup sugar, 2 egg yolks (reserve whites) and 1 cup milk until thick. Cook slowly and stir frequently. Take from heat and add gelatin. Let cool.

4. Beat egg whites until stiff and empty into cool custard. Add the cool whip and 1 tsp vanilla and fold together. Pour into graham cracker crust. Refrigerate.
