Hash Brown Casserole

Ingredients
- 3 Tbl. butter
- 1 small onion, chopped
- 4 C. frozen shredded hash browns
- 1 pound sausage
- 2 1/4 cups whole milk
- 8 large eggs
- 1 tsp salt
- 1/4 tsp pepper
- 1/4 tsp nutmeg
- 2 Tbl dijon mustard
- 8 cups cubed french bread
- 2 cups grated cheddar chesse
- 2 cups parmesan cheese

Step 1
Preheat oven to 350. Spray casserole dish with Pam. Melt the butter and then add the onion and saute until soft, about 5 minutes. Add the hash browns and break apart, saute until soft. In second pan saute the sausage and cook until cooked through. In large mixing bowl combine the eggs, milk, salt, pepper, nutmeg and mustard and stir briskly to blend. Spread the onion and hash brown mixture into greased dish. Place the bread cubes on top of the hash browns. Put sausage on next and then pour the egg mixture on top. Add the parmesan on next and then the cheddar. Bake uncovered for 45-50 minutes until puffed and golden brown.
