Tofu Parmesan

Ingredients

  • One block of extra firm tofu
  • 1/2 cup flour
  • 2 eggs
  • 2 Tb. milk
  • 1/2 cup breadcrumbs
  • 1/2 cup panko breadcrumbs
  • 1/2 tsp garlic powder
  • 1/2 tsp dried basil
  • 1/2 tsp salt
  • 1 1/2 tsp grated parmesan
  • 3-4 Tb. canola oil
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup marinara

Preparation

Step 1

Slice tofu into about 10 pieces

Put flour in one bowl...
Egg and milk mixture in a second bowl...
Mix breadcrumbs, spices and salt into a third bowl.

Dip each slice of tofu into each bowl... flour, egg mixture then breadcrumb mixture.

Heat oil in large pan... cook tofu undisturbed for 2 minutes... flip and cook for 2 more minutes.

Preheat oven to 350. Place tofu on cookie sheet and top with shredded cheese. Bake until cheese melts... about 5 minutes.

Plate with pasta and top with marinara.
