Ingredients
- 1 c couscous (or quinoa)
- 3/4 c dried cranberries
- 1 c frozen peas, thawed
- 1/4 c walnuts, chopped
- 1/4 c green onions, chopped
- 1/4 c balsamic vinegar
- 1 1/2 T oil
- 2 cloves garlic, minced
- Freshly ground black pepper
Preparation
Step 1
1) Cook couscous according to package directions
2) Combine the cooked couscous, cranberries, peas, walnuts, and green onions.
3) Whisk together the vinegar, oil, garlic, and black pepper.
4) Pour the liquids over the couscous mixture and stir well.
5) Chill for 1 hour.
