Ingredients

  • 2 1/4 cup flour
  • 1 tsp. soda
  • 1 tsp. pumpkin pie spice
  • 1/2 tsp salt
  • 2 eggs
  • 2 cup sugar
  • 1 cup canned pumpkin
  • 1/2 cup vegetable oil
  • 1 cup frozen cranberries, chopped

Step 1

In a bowl, combine the first 4 ingredients. In separate bowl, beat eggs and sugar; add pumpkin and oil, mix well. Stir into dry ingredients just until moist. Fold in cranberries. Bake at 400 for 18-22. Cool on wire racks.
