Texas Brownies - Gluten Free

Gooey wonderful chocolate bliss! Easy to make and easy to eat, you won't go back to your old recipe!
Topping:
1/2 cup butter
2 tbsp. cocoa
1/4 milk or milk alternative
3 1/2 cups icing sugar
1 tsp vanilla

Heat to boiling the butter, cocoa and milk while stirring (this can be done in a microwave, just make sure to stop and stir every 30 seconds or so to avoid boiling over). Remove from heat and beat in vanilla and icing sugar. Pour this on lop of brownies after they have cooled for about 10 minutes. Let entire pan cool so that icing hardens. Makes one 13x9 inch pan.

  • 1 cup rice flour
  • 1 cup corn starch
  • 2 cups sugar
  • 1/2 cup butter
  • 1/2 cup shortening
  • 1 cup coffee or water
  • 1/4 cup cocoa
  • 1/2 cup buttermilk or (almond milk or water with splash of lemon juice)
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp vanilla

Step 1

Preheat oven to 350 degrees F. Grease and flour 13x9 inch cake pan.

Cream together butter, shortening, sugar, vanilla and eggs.

Combine in another bowl all dry ingredients. Beat this into creamed mixture, then add remaining liquids until well mixed.

Pour into pan and bake for 35 minutes or until toothpick inserted into centre of cake comes out clean.

Let cool on wire rack for 10 minutes while making icing. Pour icing on and let cool. Enjoy! If you want to freeze these brownies, ensure they are well cooled then cut into squares and place in container first.
