Sausage Casserole

Ingredients
- 5 T. olive oil
- 1 1/2 lb. Italian sausage cut into 1 inch. pieces, casing removed
- 2 red bell peppers, cored and sliced
- 2 green bell peppers, cored and sliced
- 2 large onions, sliced
- 1 (28 oz.)can diced tomatoes
- 1 (6 oz.)can tomato paste
- 1 1/2 c. water
- 1 t. each dried oregano, thyme and rosemary
- 1/2 t. black pepper
- 1 lb. penne pasta, cooked al dente, and drained
- 1/4 c. shredded Parmesan cheese

Step 1
Preheat oven to 350 deg. HEat 3 T. oil in large skillet over medium heat. Cook sausage until brown, about 10 min. Remove from skillet and set aside. Saute peppers and onions in skillet until onions are transparent, about 10 min. Return sausage to skillet; add tomatoes, tomato paste, water, spices and pepper. Mix well. Cook and stir 5 min. over low heat. In a large bowl, stir penne with remaining olive oil. Stir in sausage and peppers mixture. Transfer to casserole dish and bake 10 to 45 min. Remove from oven; sprinkle with cheese.
