Ingredients
- 2 C all purpose flour l
- 1 t salt
- 2 t cinnamon
- 2 t baking soda .
- 1 ½ C Olive oil
- 2 C Sugar
- 4 eggs
- 1 lb carrots finely grated
- ½ C walnuts
- ½ C raisens

Preparation
Step 1
Sift together the flour, salt, cinnamon and baking soda. Set aside. In a large bowl combine oil, and sugar, add eggs and blend well. Blend in the dry ingredients. Add carrots and nuts and raisins. Mix well.
Bake in two greased and floured 9 inch round pans. 350 oven for 45-50 minutes
Frosting
1 8 oz package of cream cheese
1 stick of margarine
1 t vanilla extract
½ box of powdered sugar
1 C walnuts
½ C coconut
Mix cream and margarine well. Add vanilla; beat in sugar a little at a time. You can either beat in chopped walnuts and coconut or use as decoration when done in the top and between layers if desired. I find that when mixed in it looks to lumpy. I like to decorate…
