Vegetable Kebabs

Ingredients

  • Marinade:
  • 12 small button mushrooms, wiped
  • 1/2 pound tofu, firm, cut into 1/2-inch cubes
  • 1 small red bell pepper, seeded and cut into 1/2-by-1-inch strips
  • 1 small green bell pepper, seeded and cut into 1/2-by-1-inch strips
  • 3 small zucchini (about 3/4 pound), cut into 1/2-inch thick slices
  • 12 cherry tomatoes
  • 6 Kebab skewers, bamboo or metal
  • 2 tbsp canola oil
  • 2 tbsp sesame oil
  • 1 tbsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp ground ginger
  • 1 tbsp honey
  • 1/2 cup soy sauce, lite, low-sodium

Preparation

Step 1

Mix marinade ingredients; pour in dish large enough to hold vegetable kebabs. Thread vegetables on skewers; divide evenly for 6 kebabs. Place in marinade and marinate one hour or more, turning occasionally to coat all vegetables. Barbecue 10 to15 minutes or until tender. (1 serving = 2 vegetable skewers).
