HAWAIIAN MEATBALLS ON RICE

Ingredients

  • 1 can crushed pineapple in juice, divided
  • 1 cup barbecue sauce, divided
  • 1 lb ground beef
  • 1/4 cup instant rice, uncooked
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 tbsp onion soup mix
  • 1 tbsp margarine or oil
  • 1 small onion, chopped
  • 1 green or red pepper (or both) chopped
  • 1 clove garlic, minced
  • 1 celery stalk, finely sliced
  • 2 cups long grain rice

Preparation

Step 1

Mix half of pineapple, 1/4 cup barbecue sauce, ground beef, 1/4 cup instant rice, onion soup mix, salt and pepper in large bowl until well blended.
Shape mixture into 24 meatballs, about 1 1/4” each.
Place in large skillet with a bit of margarine or oil and saute with onion, peppers, garlic and celery and simmer till meatballs are beautifully browned.
Stir in remaining pineapple, pineapple juice and 3/4 cup barbecue sauce.
Cover and continue to simmer 10-15 minutes.

Meanwhile, prepare 2 cups long grain rice, according to package directions. You may add 1 tsp of chicken soup crystals to water for more flavor, if desired. Serve meatballs and sauce over rice, and some nice green veggies of your choice.
