Ingredients
- 1 lb lasagna noodles--Bring water to rapid boil and add
- lasagna noodles. When done, separate and lay out flat on wax or aluminum paper.
- RICOTTA/COTTAGE CHEESE FILLING
- 4 cups Ricotta or Cottage Cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup parsley, chopped -substitute with
- spinach--1 (10oz) pkg frozen chopped spinach, thawed
- and well drained
- 4 eggs
- 1 tsp salt
- 1/4 tsp black ground pepper
- Mix all ingredients in large mixing bowl.
- MEAT SAUCE
- 1 1/2 - 2 lbs ground beef
- 1 - onion
- 6 cloves garlic, chopped or 1- 2 Tbsp minced garlic
- 3 Tbsp olive oil
- 3 cans stewed tomatoes
- 1 12 oz can tomato paste
- 1 tsp salt
- 1/2 tsp oregano
- 1/2 tsp basil
- 1/4 tsp crushed red pepper
Preparation
Step 1
Saute beef, onions, garlic and oil in saucepan until meat is well browned. Drain, then add remaining ingredients.
Simmer uncovered for 1-2 hours, stirring occasionally.
Make sure it does not burn.
Arrange 4 lasagna noodles lenghtwise over a layer of meat sauce. Spread sauce, cheese filling and mozzarella cheese. Repeat on next layer. Top with final layer of remaining sauce, ricotta filling and mozzarella. Cover with aluminum foil and bake at 350 for 15 minutes. Remove foil and bake an additional 20 minutes. Cool for 10 minutes and serve.
