And, an opportunity to clean out the ‘frig.
In an oven-proof 8” skillet, heat 1 Tblspn olive oil over medium heat. Sauté veggies – diced onion, sliced mushrooms, chopped broccoli, chopped bell pepper, etc.
If using eggs, whisk with Egg Beaters in a small bowl. When veggies are soft, add egg mixture and seasoning – salt, pepper, smoked paprika, etc. Stir in a couple tablespoons of shredded parmesan cheese.
As egg mixture starts to set, top with shredded cheese, asparagus, onions, mushrooms, etc – much as you would a pizza.
Bake in the oven, 325 F, for 12-20 minutes, until eggs are cooked and top is slightly browned.
