Ingredients

  • 1 1/3 c flour
  • 2/3 c yellow corn meal (not coarse)
  • 1/3 c sugar
  • 1 1/2 t BP
  • 3/4 t soda
  • 3/4 t salt >>>>stir together
  • 1 1/2 sticks unsalted butter, melted & cooled
  • 2 large eggs
  • 1 1/2 c buttermilk >> whisk tog & add to dry ingred
  • 1/2 c golden raisins, coarsely chopped
  • 1/2 c dried cranberries, coarsely chopped
  • 1 1/2 T fennel seeds, crushed w/ mortar & pestle
  • >>>>stir in
  • Put into 10 mini loaf pans (or 2 8X4X3")
  • let stand 10 min.
  • Bake 20-25 min @ 375.
  • Cool 10 min, invert on racks & cool completely.
