Ingredients

  • 1⅓ c flour

  • ⅔ c yellow corn meal (not coarse)

  • ⅓ c sugar

  • 1½ t BP

  • ¾ t soda

  • ¾ t salt >>>>stir together

  • 1½ sticks unsalted butter, melted & cooled

  • 2 large eggs

  • 1½ c buttermilk >> whisk tog & add to dry ingred

  • ½ c golden raisins, coarsely chopped

  • ½ c dried cranberries, coarsely chopped

  • 1½ T fennel seeds, crushed w/ mortar & pestle

  • >>>>stir in

  • Put into 10 mini loaf pans (or 2 8X4X3")

  • let stand 10 min.

  • Bake 20-25 min @ 375.

  • Cool 10 min, invert on racks & cool completely.
