Pumpkin Cake Roll

This is a favorite of my family and friends, I'm always ask to bring this for potluck during the holidays.

Ingredients

  • 3 eggs
  • 1 cup sugar
  • 2/3 cup pumpkin
  • 1 t. lemon juice
  • 3/4 cup all purpose flour
  • 1/2 t. baking powder
  • 1/2 t. baking soda
  • 1 t. ground cinnamon
  • 1/2 t. ground ginger
  • 1/2 t. ground nutmeg
  • 1/2 t. ground cloves
  • 1/2 t. salt
  • Filling;
  • 1 cup powered sugar
  • 8 oz. cream cheese
  • 6 T. butter
  • 1 t. vanilla

Preparation

Step 1

Beat eggs well; beat in sugar. Stir in pumpkin and lemon juice. combine other ingredients and stir well. Pour onto greased and floured cookie sheet (15"x10") and cook for 15 min., at 375 F. Turn out on clean linen towel dusted with powered sugar, roll cake and towel up together and let cool completely.





For filling; beat cream cheese, butter, powered sugar, and vanilla until smooth, unroll cooled cake, spread cream cheese mixture on cake and re-roll with seam on bottom, sprinkle with powered sugar.
