Ingredients
- 2 lbs. chicken breast
- 2 T coconut oil
- 1 green bell pepper
- 1 red bell pepper
- 1 white onion
- 2 cloves garlic, finely chopped
- 1 tsp. sea salt
- 1 tsp. cumin
- 1 tsp. chili powder
- 1 can organic black beans
- 1 pkg. sprouted grain or brown rice tortillas
Preparation
Step 1
Heat oil in a large skillet over medium heat. Add chicken breast. Sprinkle with 1/2 tsp. sea salt and garlic and cook until done. Remove from heat and let cool. Using a knife and fork, pull apart chicken until shredded.
In the same skillet, add enough water to cover the bottom of the pan. Add sliced bell peppers and onion. Add remaining garlic and sea salt and cook for 5-10 minutes.
Add chicken back to skillet and season with cumin and chili powder. Cook until veggies are tender.
Serve over tortillas with black beans.
