Ingredients
- 2 t olive oii
- 1 1/2 tsp corriander
- 1/4 tsp cayenne pepper
- 1 1/2 lb large cleaned shrimp
- 1/2 pint cherry tomatoes
- 1 bunch scallions cut on 3" diagonal
- kosher salt
- 1/2 c plain yogurt
- 2 t fresh lemon juice
- 1 t chopped fresh mint, additional for garnish
- 4 pitas, warmed
Preparation
Step 1
1) preheat grill to medium
2) combine oi, coriander and cayenne in bowl. add shrimp, tomatoes and scallions; season with salt and toss
3) whisk yogurt and lemon juice in small bowl; add mint
4)toss shrimp mix onto grill pan and grill about 8 minutes flipping once til shrimp are cooked
5) serve on pita with yogurt sauce and additional mint for garnish
