Bread: Banana Nut
- 1 3/4 cup flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup sugar
- 1/2 cup butter, softened
- 2 large eggs
- 1/4 cup plus 1 Tbsp buttermilk
- 3 ripe bananas, mashed
- 1 tsp vanilla
- 1 cup pecan, chopped (optional)
Mix Flour, baking soda, salt together and set aside.
Cream butter and sugar until light and fluffy. Add eggs one at a time beating after each addition. Then add milk.
Blend well. Gradually add dry ingredient to creamed mixture.
Mix well, fold in bananas, vanilla and nuts.
Pour mixture into greased and floured loaf pan.
Bake at 325F (350 for high altitude) for 50-60 minutes until tester comes out clean.
Cool in pan for 10 minutes. Run knife along edges and turn out onto a wire rack.
