Sesame Oat Chicken

Ingredients
- 2/3 cup old-fashioned rolled oats
- 1 teaspoon dried thyme
- 1/2 teaspoon white pepper
- 1 tablespoon sesame seeds
- 4 boneless, skinless chicken breasts (about 1 1/3 pounds in all)
- 6 tablespoons cooking oil
- Salt
- Lemon wedges, for serving
Preparation
Step 1
1. In a food processor, process the rolled oats until ground fine. Transfer to a shallow bowl and toss with the dried thyme, pepper, and sesame seeds. Dredge the chicken breasts in the oat mixture, pressing to coat well.
2. Heat the oven to 250 degrees. In a large nonstick frying pan, heat 3 tablespoons of th oil over moderately high heat. Add two of the chicken breasts and cook until browned and cooked through, 3 to 4 minutes on each side. Drain on paper towels and blot lightly. Put the chicken on a plate and put in the oven to keep warm. Repeat with the remaining two chicken breasts and 3 tablespoons oil.
3. Sprinkle the chicken with salt. Serve the chicken breasts with the lemon wedges.
