Chunky Potato Casserole
- 5 potatoes with skins (baking, red, or otherwise)
- 1 small container sour cream (or Greek yogurt)
- salt and pepper
- 1 can celery soup
Cooking time 30mins
Boil potatoes. Slice into a baking dish. In a saucepan add soup, sour cream (or Greek yogurt), butter (original recipe calls for 1 stick. Try 1/4-1/2 stick or to taste). Cook until hot and add salt and pepper. Pour over potatoes. Place onion ring and chopped onion on top. Sprinkle with cheese. Bake at 350 for 30 minutes.
