Ingredients

  • 1 Package yellow cake mix (box)
  • 1 Can (29 ox) Solid Pack Pumpkin
  • 1 12oz can evaporated milk
  • 1 Tsp Vanilla
  • 3 Large eggs
  • 1 1/2 Cup Sugar
  • 1/2 Tsp Salt
  • 1 1/2 Tsp pumpkin pie spice
  • 1 Cup Chopped pecans
  • 1 Cup butter (melted)

Preparation

Step 1

Preheat oven to 350 deg. Line a 9x13 baking pan with waxed paper and spray with pam or equal non-stick spray.

Mix
Sugar, pumpkin, eggs, milk & spices. Pour into prepared pan--sprinkle dry cake mix over top--spread pecans over mix and drizzle butter over top.

Bake for 50-60 minutes, until knife comes out clean.

Chill completely--turn out onto platter or board and frost with cream cheese frosting.

Frosting
Mix together, 8oz cream cheese, 12 oz cool whip and 1 1/2 cup confectioners sugar, 1 Tsp vanilla--Frost cake.
