Ingredients

  • 2 large peeled sweet potatoes, cut into round chunks
  • 1 pound peeled and chopped or sliced carrots
  • 1 pound peeled and diced turnips
  • 2 medium sized yellow onions, chopped
  • 6 dried apricots, chopped
  • 2 Tablespoons chopped fresh cilantro
  • 1 teaspoon each of turmeric and cumin
  • 1/2 teaspoon of ginger and cinnamon
  • 1/4 teaspoon cayenne pepper
  • 14 ounce can vegetable or chicken broth

Combine all ingredients in crock pot. Cut on low for 6 hours, or on high for 4 hours.
