Candied Walnuts

Ingredients

  • 250g or 9oz sugar
  • 100ml or 3.5oz water
  • 450g or 1lb shelled walnut halves
  • oil for deep frying

Preparation

Step 1

Dissolve sugar in water, then bring to boil and cook for 2 minutes.

Blanch walnut in a pan of boiling water briefly, then drain. Tip walnuts into syrup stirring to coat. Cool for 5 minutes, then drain

Fill wok 1/4 full of oil. Heat oil to 375F, or until a piece of bread fries golden brown in 10 seconds. Add walnuts in batches, stirring to brown evenly. As soon as they brown, remove with a wire sieve or slotted spoon and put of foil, making sure they are well spaced. Do not touch as they are very hot!

When cool, place on paper towels.
