Leonard's Woopie Pies

Ingredients

• 1cup sugar
• 1/2 cup shortening
• 2 eggs
• 2 cups flour
• 1/2 cup cocoa
• 1 1/2 tsp baking soda
• 1/2 tsp salt
• Filling
• 2 egg whites
• 1 tbsp vanilla
• 1/4 cup milk
• 3 cups icing sugar.
• ( This seems to be about twice the amount of filling you need )

Preparation

Step 1

!. Mix the first three ingredients together with an electric mixer.

2. Blend together the dry ingredients.

3. Add the dry ingredients alternately with one cup of milk untill all are used.

4. Blend in 1tbsp / plus 1 tsp vanilla.

5. Drop by rounded tbsp onto a grease baking sheet. Try to have an even number of cakes for tops and bottoms.

6. Bake at 350 for 15 - 20 minutes.
