Fried Red Tomatoes

Just like the Fried Green Tomatoes, a treat from the folks in the South of the U.S.

Ingredients

  • 4 tomato, firm ripe
  • 1/2 cup cracker crumbs, finely ground
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup olive oil

Preparation

Step 1

Slice tomatoes to a thickness of ¾-inch.
1. Combine cracker crumbs, salt, and pepper-mix well.
2. Add tomato slices and coat evenly.
3. Heat oil to 375º in a large skillet.
4. Add tomatoes and cook until golden on both sides. D
5. rain on a cooling rack and blot with paper towels.

Serve hot or warm.
