Bacon tomato Spinach Salad

Ingredients

  • ½ lb sliced bacon diced
  • ½ c Catalina dressing
  • 1.2 tsp prepared mustard
  • 1/8 tsp pepper
  • 8 cups baby spinach or torn fresh spinach
  • 2 medium tomatoes, cut up
  • ½ cup blue or feta cheese, crumbled
  • 2 hard boiled eggs, peeled and sliced
  • 1 small cucumber diced
  • ¼ of red onion, diced
  • ½ c croutons

Preparation

Step 1

n large skillet, cook bacon over medium heat until crisp, remove to paper towel. Drain, but reserve 2 tbsp of drippings. Add the salad dressing, mustard, and pepper to drippings. Mix well.
In a large bowl, combine the spinach, tomatoes, cheese, egg, onion, cucumber and bacon.
Drizzle the salad dressing mix over and stir. Add the croutons and stir again.

Serve immediately.
