5½ bitter or semi sweet chocolate
5 egg yolks
1 whole egg
2 ounces granulated sugar
8 fluid ounces heavy cream, whipped
In a microwave or over a double boiler, melt the chocolate. Set aside. Place the egg yolks, whole eggs and sugar in a bowl over simmering water. Wisk until warm without cooking eggs. Place into the mixer with whip attachment and add the chocolate. Whip in 1/3 of the whipped cream and fold in the rest.
