Potato Latkes

Ingredients

  • 3 tbsp flour
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1/4 tsp pepper
  • 1 onion, grated
  • 1 egg, beaten
  • 4 baking potatoes, peeled and cut into chunks
  • 2 tbsp EVOO
  • Applesauce for dipping

Preparation

Step 1

In a large bowl, combine all ingredients except potatoes. Finely chop potatoes in a food processor. Drain potatoes. Stir potatoes into onion mixture.

Heat EVOO over medium heat. Drop potato mixture by the tbsp into the EVOO and cook until browned on both sides.
