Zucchini Spice Cake

Ingredients

• 3/4 cup all-purpose flour
• 3/4 cup whole wheat flour
• 3/4 cup packed brown sugar
• 3/4 tsp baking soda
• 1/4 tsp salt
• 1 tsp ground cinnamon
• 1/2 tsp ground nutmeg
• 1/8 tsp ground cloves
• 1 cup shredded unpeeled zucchini
• 1/2 cup nonfat milk
• 2 tbsp oil
• 1 tsp vanilla
• 1 egg
• 1/4 cup chopped walnuts, toasted

Preparation

Step 1

Place flours, brown sugar, baking soda, salt, cinnamon, nutmeg and cloves in bowl and stir to combine. Add zucchini, milk, oil, vanilla and egg and stir well. Stir in walnuts. Pour batter into 8-inch square baking pan coated with cooking spray.

Bake at 350 F until wooden pick inserted in center comes out clean, about 35 minutes. Cool completely in pan on wire rack.
