Potato Doughnuts with Vanilla Glaze

Ingredients

  • Combine 2 cups unseasoned mashed potatoes

  • 2 cups sugar

  • 3 eggs well beaten

  • 2 Tbsp butter (melted)

  • Sift Together

  • 6 ½ cups sifted flour

  • 2 Tbsp baking powder

  • 1 tsp salt

  • 1 tsp nutmeg (optional)

  • --------------------------------------------------------

  • Vanilla Glaze

  • 2 cups powdered sugar

  • 3 Tbs milk

  • 2 Tbs butter

Directions

Add dry ingredients to potato mixture alternately with 1 cup of milk. Chill dough in refrigerator. Turn out on lightly floured board. Roll out to ½ inch thickness, handling as little as possible. Cut with floured 3-in doughnut cutter. Fry a few at a time in deep fryer. Fry until golden brown. Drain on paper towel. Sprinkle with vanilla glaze. ---------------------------------------------------- Vanilla Glaze Instructions: Heat milk and butter then blend sugar-- Add 1 1/2 tsp of vanilla.
