Ingredients
- Olive oil
- 1 3/4 cps chopped onion
- 28 oz enchilada sauce
- 5 plum tomatoes, chopped
- 1 1/2 tsp chopped chipotle chilies
- 1 cup cilantro
- 3 cups shredded cooked turkey or chicken or ground beef
- 2 cups grated mexican cheese
- 3/4 cp sour cream
- 12 6" corn tortillas

Preparation
Step 1
Heat 3 tbsps oil in skillet. Add onions and sautee. Add enchilada sauce, tomatoes, and chipotles. Simmer 20 mins covered. Stir in 1/2 cp chopped cilantro.
Mix turkey, cheese, sour cream, 1/4 cp chopped onions and 1/2 cp cilantro in bowl.
Heat tortillas in microwve to soften
Spread 1/2 cp sauce in 13X9" pan. Spoon 1/4 cp meat mixture in center of tortilla and roll. Place seam side down in dish. Spread 2 1/2 cps sauce over enchiladas. Sprinkle with 1/2 cp cheese. Bake @ 350 for 30 mins
